Being a Jersey Girl from down the shore (exit 7A) when Jersey blues are on sale I load up.
Some for the freezer, some for the pie. I use my Mom's cookbook of family favorites. Her pie crust: flour 2 C, shortening 2/3 C, salt 1 tsp, 3-6T ice water.
My shortcut with the food processor.
Rest in the fridge. Roll out.
Some sugar and cinnamon. (They aren't cooking, I use my fry pan as a mixing bowl.)
A little lemon rind...
Being a lapsed weaver I always make a lattice top.
Bake at 475 for 10 min, reduce to 400 for 50 min. Just from the oven it looks like this.
It goes fast.
